This is one of my most favourite things to do lately. 

 
There is something very therapeutic about something slowly toasting away and stiring it every so often. Watching the transformation from oats to a delicious granola is exciting! (I need a life dont I!?!)

Apple Cinnamon Granola

Ingredients

Scale
  • 750g oats
  • 200g almonds
  • 100g pepitas
  • 200g sunflower kernals
  • 200g shredded coconut
  • 50g sesame seeds
  • 60g flaxseed meal
  • 200g diced dried apple
  • 3 tablespoons ground cinnamon
  • 100g of coconut oil
  • 200g apple purรฉe
  • 40g maple syrup
  • 1 heaped teaspoon of vanilla

Instructions

  1. Preheat oven to 180 degrees.
  2. Place almonds into bowl and blitz on speed 5 until slightly crushed. This is to taste.
  3. In a large dish combine cinnamon, oats, almonds, pepitas and sunflower kernals.
  4. In the bowl add oil, vanilla, apple purรฉe and maple syrup.
  5. Mix at 50 degrees, speed 2 until melted. This shouldnโ€™t take too long.
  6. Pour the oil mix over the oat mixture. Use hands or spoon to mix well.
  7. Spread mixture across two large ovenproof dishes or trays lined with baking paper.
  8. Place into the oven. I had to cook mine for 45 minutes to get a nice golden colour โ€“ you might like more or less colour. The trick is to just watch it. Stir the mixture every 10 minutes or so to avoid any burnt bits.
  9. Once almost done, add the coconut and sesame seeds. Cook for 10-15 minutes or until coconut is slightly toasted.
  10. Remove from oven. Add flaxseed meal and dried apple to mixture. Combine well.
  11. Once cool, store in a jar or airtight container.

    Just curious with this Granola, do you serve with milk or yoghurt? Or just as it is? I have never had Granola but it sounds tasty and I would love to start my day with something like this!

    This sounds stupid, but do you use rolled oats or quick oats??
    I have both in the pantry and dont want to use the wrong one…

    WOW. Sensational. Just made this, with a few adjustments because of ingredients. I also added some chia seeds and macca powder. Couldn’t wait for breakfast, just had a bowl for lunch, and it is delicious. Miss14 said it smells amazing. Thanks for the recipe.

    But of a labour of love all the stirring and turning but I will use a higher pan next time. It makes heaps though, I only made a half batch for the breakfast bar recipe and still heaps but smells delicious. Going to have some with yoghurt for brekky tomorrow! Thanks Peta
