Keeping on the lunchbox AND Easter theme, I am sharing my Carrot Cake Donut recipe with you. Oh goodness me these are delicious especially when served warm.

If you are feeling super indulgent make up a batch of cream cheese frosting and ice each donut. Delicious!!!

Carrot Cake Donuts

Ingredients

Scale
  • 120g carrot, roughly chopped
  • 130g butter, melted
  • 250g self raising flour
  • 70g sugar, or less if preferred
  • 160g milk
  • 1 egg
  • 2 tsp Vanilla bean paste
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions

Then mix like this

  1. Turn on donut machine to warm or preheat oven to 180C.
  2. Add carrot to bowl. Speed 7 / 4 seconds. Scrape down the sides of bowl. Remove any large chunks.
  3. Add remaining ingredients to bowl. Speed 4 / 20 seconds.
  4. Place mixture into a large piping bag.
  5. Pipe mixture into the donut machine or into a donut tin. This is much easier than spooning in.
  6. The machine takes 5-8 minutes to cook but an oven would be around 15 -18 minutes. This depends on the size of the machine or tin of course.
  7. Allow to cool on a wire rack.

Or cook like this

  3. Add remaining ingredients to bowl. Mix well to combine.
  4. Place mixture into a large piping bag.
  5. Pipe mixture into the donut machine or into a donut tin. This is much easier than spooning in.
  6. The machine takes 5-8 minutes to cook but an oven would be around 15 -18 minutes. This depends on the size of the machine or tin of course.
  7. Allow to cool on a wire rack.
