Join us This is my recipe for Baked Muesli Bars. They are a spin on my Fruitless Muesli Bars that are very popular! My kiddies absolutely love these and they are made almost weekly in my house. They freeze well too so are great to whip up and freeze for those days you have nothing left in the house for the lunchboxes! Apple Cinnamon Pikelets

Join us We loooooooooove pikelets in our houses so when I realised the freezer was empty and there were no more lunchbox snacks left I thought I would get cooking. Double Chocolate Hot Cross Buns

Join us A Double Chocolate Hot Cross Bun pull apart? It doesn't get much better this for Easter breakfast or brunch!  This recipe is based of my popular Hot Cross Buns recipe from 2014. This recipe does not have any bread improver in it. If I'm making bread for friends and don't want to risk it being a flop I'll add just a little in. Coconut Lime Pikelets

  This is a recipe that was featured in my 2015 Calendar and it has been so popular I thought I would pop it on the blog as well. Who wouldn't love Coconut Lime Pikelets!? Pikelets are such an easy thing to make and great to get the kiddies involved in. Breakfast Wraps

These wraps are inspired by my mother in law after a recent stay with her in QLD. These are not only delicious for breakfast but make a really quick and easy dinner. I try to always keep a packet of homemade wraps in the fridge so I can make something like this quickly for lunch. Now I have a confession. Not everything in this recipe is made in the tmx for these. Banana Muesli Breakfast Bars

  These were something I recently created by fluke. Turned out everyone in the house loved them so I got a bit more creative with them. These are like a biscuit bar, just a little softer due to the banana. These are perfect for a breakfast on the go bar or as a lunchbox snack. Just be mindful of nuts though if these are going to school. These make great biscuits (will make about 48 small biccies) or into 12-18 bars depending on what size you make them. Apple Pancakes with Caramel Sauce

  I wouldn't say these are a regular around here but these Apple Pancakes with Caramel Sauce are a  favourite for special occasions! These remind me of my favourite pancakes from The Pancake Parlour. So delicious! You can certainly change up the fruit you use. Pears or banana work really well. Id recommend cooking the banana in a frying pan over medium heat until caramelised though to ensure it keeps its shape. Love this recipe? Fluffy Vanilla Pikelets

  These Fluffy Vanilla Pikelets are just that. Fluffy, taste of vanilla and pikelets! Pikelets and pancakes are very popular in our house. the boys love them. What I love about them is they are so easy  to make, make plenty and can be frozen for the lunchbox. These are so soft and fluffy and have a delicious hint of vanilla in them. I use Chef's Choice Alcohol Free Vanilla Extract in these and it gives them a beautiful vanilla flavour. You can of course use vanilla of your choice. Strawberry Apple Granola

  As many of you know we love granola/toasted muesli in this house. I love making it, my partner loves eating it. Serve this with milk or with yoghurt and fresh fruit. I even use this to make Granola Cookies. Pancake Dippers

I thought these were cute so I had to post!   Surely I'm not the only one that often makes pancakes and they join together and become an "8" like shape? Whilst cooking pikelets yesterday I thought I'd experiment (surprise surprise! I should really just stick to a recipe!).    Whip up your favourite pancake or pikelet batter and pour into a squeeze bottle. Banana Honey Pikelets

  Pikelets are something I make often for afternoon tea and especially for the lunchbox.    I freeze two together and in the morning of school I pull them out and pop into the lunchbox. They defrost in time for morning tea.   These are yummy on their own but even nicer with some whipped cream, strawberries and sliced banana. A drizzle of melted white chocolate wouldn't go astray either! Oven Pancake Bites with Honey and Cinnamon

Today the boys wanted pancakes for afternoon tea but with a sick bub I couldn't be bothered standing at the stove for multiple batches.   Cooking these in the oven is super quick. It took about 5 minutes at 180 degrees to cook these.    These are bite size and perfect in the lunchbox. Apricot and Coconut Granola

  My partner can't decide if this or my Apple and Cinnamon version is his favourite. Lucky I make a new batch weekly and can vary the flavours.    I use apricot purée as the sweetener in this. You can make this by placing apricots with stone removed into the tmx with a tmx measuring cup of water and cook for 10 mins, speed 2, 100 degrees. Blitz to form a purée. Chocolate Honey Chia Pudding

Well I thought I'd try my hand at chia pudding at last. I was hoping the kiddies would love it and take it in their lunchbox. Fail! They were far from impressed.   I don't eat breakfast often so I was hoping this might be a good breakfast option for me. I think I still need to get my head around it. Almond Crunch Granola

Yes. ANOTHER granola recipe!    This is a fruitless version shown which I serve to my dried fruit hating kiddies (yet they eat it in their lunchbox!?). I have since added 400g sultanas and 200g diced dried apricot to the mixture since the picture was taken as my partner loves fruit in his granola. I love this because it's so much cheaper than store bought cereals, healthier and it's very filling. My partner finds it fills him up until lunch time.    This make a lot of granola, over 1.5kgs. Mango and Peach Porridge

Another baby porridge. My 5 month old is loving these. With this one I've actually split the mix in two to have one batch of porridge and a batch of just the fruit purée for the times you just want fruit.    The fruit and porridge versions can be freezed as it thaws and reheats nicely.   The porridge consistency can be easily thinned with a little cooled boiled water or thickened with more oat cereal.
