Choc Banana Icey Poles

Yesterday we had a little melted chocolate left in the tmx and didn't want to waste it. I added 600ml milk, 1 chopped banana and one tablespoon of honey to it. I blitzed on speed 4 for 30 seconds and froze them into icey poles for the kiddies. We made 6 icey poles and drank the rest with afternoon tea but this recipe would make 12 icey poles in my holders.

Cookies and Cream Icey Poles

The other day I was on a cookies and cream roll. I made fudge and hot chocolate. From those I made these icey poles. 50g white chocolate melted in the tmx on at 50 degrees, speed 3. Add 10g crushed chocolate cream biscuits. Mix and add 500mls milk and a dash of vanilla. Sprinkle some extra crushed cookies into each mould. Pour milk mixture into the icey pole moulds and freeze. If you want a creamier icey pole make custard from the EDC, add chocolate and biscuits and pour into moulds.

Cheats Passionfruit Curd Ice Creams

Originally posted on our Facebook page 26th November 2013. The other day I posted my Passionfruit Custard Tarts. The recipe only called for half a batch of custard and only a little of the passionfruit curd (also posted). Well here is a way to use up the other half of the custard batch and the remaining curd. Combine 3/4 of the Passionfruit curd (about 1/2 - 3/4 cup depending on your tastes) with half a batch of EDC custard. Pour into icey pole moulds and let set overnight. This made 6 in my moulds. Delicious! I'm off to have one now.

Nutella Ice Creams

I can't take credit for this idea. The concept of nutella and milk to make ice creams has been floating around online for years. I just changed quantities to suit our tastes. Blitz 100g nutella spread and 500mls milk on speed 5 for 20 seconds. Pour into icey pole moulds and freeze overnight. Simple! Banana or strawberries are a great addition!

Vanilla Bean Custard with Apple and Rhubarb

Yum yum yum!   I pop a bunch of chopped rhubarb and two chopped, peeled granny smith apples into the tmx bowl. Add 50g sugar (or 30g honey) and a teas of cinnamon. I add a tmx measuring cup of water too. Cook at 100 degrees, spoon soft for 10-12 minutes or until soft and tender. You can serve it chunky or purée it down (what I did in this photo}.   I then make custard from the EDC using 30g vanilla sugar (instead of the quantity they recommend) and some vanilla seeds from a vanilla pod.
