My kiddies love nuggets. I love that I can hide a range of goodies in them and they gobble them down. Now the broccoli isn’t entirely hidden. You can see green specks through the nugget but the kiddies didn’t even notice especially once dipped into sauce.

These are great to make in bulk and freeze either before or after the cooking process. It makes for a super quick meal. I even put these in the lunchbox much to  the kiddies delight.

Because of all the flavours in this, you can barely taste the broccoli.

Chicken Broccoli Nuggets

Description

These are great to make in bulk and freeze either before or after the cooking process. It makes for a super quick meal. I even put these in the lunchbox much to the kiddies delight.


Ingredients

Scale
  • 3 slices of day old bread
  • 500g chicken breast, chopped into chunks
  • 110g broccoli florets
  • 1 small carrot, chopped roughly
  • 1 onion, peeled and quartered
  • 2 small garlic cloves, peeled
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 180 degrees. Line a baking tray with baking paper.
  2. Place bread in to bowl. Blitz on speed 7 until desired consistency, as fine or coarse as you like. Set aside.
  3. Add onion, garlic and vegetables to bowl.
  4. Blitz on speed 7 for 5 seconds. Scrape down.
  5. Add remaining ingredients.
  6. Blitz on speed 7 until combined. Approximately 5-10 seconds.
  7. Shape into 18 small nugget shapes.
  8. Coat with breadcrumbs.
  9. Place onto tray. Drizzle with a little olive oil.
  10. Bake for 30 minutes. Flip halfway through cooking.
  11. Serve.

Notes

  • You can use chicken thigh instead if preferred. Breast can dry out so be sure not to over cook it.

  6. Blitz on high speed until combined.
  7. Shape into 18 small nugget shapes.

  10. Bake for 20-30 minutes. Flip halfway through cooking.
  11. Serve.

  • If you prefer, you can use chicken mince and grate or finely chop your veggies in this and mix in a bowl then proceed to shape and cook.

    These were amazing. Don’t put a whole onion tho. A 1/4 onion would be the most as it becomes overbearing. Other than that, they were very tasty.

    Onion and garlic overpowered the taste and we didnt like the texture at all. Definately missing something taste wise.
