Keeping on the lunchbox theme, I am sharing my Choc Chip Muesli Slice with you. This is so quick and easy to whip up it makes for a great lunchbox snack but also an after school treat.

You may like to reduce the oats slightly and replace with some seeds or dried fruit.

Choc Chip Muesli Slice
Total prep time 40 minutes 
Makes 24 bars or 48 squares 

Ingredients:
200g honey 
50g butter, cubed
1 tsp vanilla extract
1 tsp ground cinnamon 
500g oats
2 egg whites
50-100g choc chips of choice 

Then mix like this:

  1. Preheat oven to 180C. Line two slice trays with baking paper. 
  2. Add honey, butter, vanilla and cinnamon to bowl. 
  3. 5 minutes / 80C / Speed 2. 
  4. Add oats and egg whites. 
  5. Reverse+Speed 4 until combined. 
  6. Pour half of the mixture into each tray. Press down well to compact. 
  7. Scatter choc chips over the top. 
  8. Bake for 20-30 minutes or until golden brown. 
  9. Allow to cool completely before slicing. 

Or cook like this:

  1. Preheat oven to 180C. Line two slice trays with baking paper. 
  2. Add honey, butter, vanilla and cinnamon into a medium saucepan.  
  3. Stir over medium heat on the stove until warmed through and butter has melted. 
  4. Add oats and egg whites to saucepan. 
  5. Stir until well combined. 
  6. Pour half of the mixture into each tray. Press down well to compact. 
  7. Scatter choc chips over the top. 
  8. Bake for 20-30 minutes or until golden brown. 
  9. Allow to cool completely before slicing.
