We have just started our next round of our FREE Freezer to Lunchbox 5 day cooking challenge! This round is all about swapping the sandwich. Each day for 5 days we cook one new non-sandwich lunchbox recipe. We are keeping that theme going on the Facebook Page this week. I will be posting some great freezeable lunchbox recipes for you to enjoy!

This is a quick and easy dish that kiddies love and is perfect for the lunchboxes! You can sneak in any extra veggies you like to which is great and you can certainly add some shredded chicken or ham to the recipe too for a meat option.

These are a little on the blander side  to be a little bit more kiddy friendly but feel free to add additional flavourings to these.

Lunchbox Noodle Frittatas

Ingredients

Gather these

  • 3 spring onions, sliced
  • 2 packets of instant 2 min noodles broken in half, you can use GF varieties
  • 5 eggs
  • 50g peas
  • 100g grated cheese
  • 1 tsp chicken stock powder
  • hot water

Instructions

Then mix like this

  1. Place noodles into internal steaming basket. Pour 600g hot water over the noodles until they are covered. Program 12 minutes / 100C / Speed 3.
  2. Remove basket from bowl with your spatula and place noodles into a bowl. Drain water from the bowl. Rinse bowl out with cold water to clean the bowl but also to cool it down completely.
  3. Place eggs into bowl. Speed 5 / 5 seconds.
  4. Add spring onions, peas, grated cheese and stock powder. Speed 3 / 5 seconds.
  5. Add egg mixture to noodles and use tongs to combine.
  6. Place a large frying pan over medium heat. Add a drizzle of oil to the pan.
  7. Using your tongs place a tablespoon of noodles into the pan. Flatten slightly to resemble fritter type shapes. Repeat until you have 4-5 in the pan.
  8. Cook for 4 minutes one side. Flip and cook for 3 minutes on the other side or until cooked through.
  9. Serve or allow to cool before freezing in an airtight container.

Or cook like this

  1. Cook noodles according to packet instructions. Once cooked, drain and place into a large bowl.
  2. In a separate bowl, add eggs and whisk to break up the eggs slightly.
  3. Add spring onions, peas, grated cheese and stock powder. Mix to combine.
  4. Add egg mixture to noodles and use tongs to combine.
  5. Place a large frying pan over medium heat. Add a drizzle of oil to the pan.
  6. Using your tongs place a tablespoon of noodles into the pan. Flatten slightly to resemble fritter type shapes. Repeat until you have 4-5 in the pan.
  7. Cook for 4 minutes one side. Flip and cook for 3 minutes on the other side or until cooked through.
  8. Serve or allow to cool before freezing in an airtight container.
