Sugar Free Wild Berry and Chia Jam

There is no refined sugar in this jam so I was a bit skeptical about this but it is actually quite nice and has set to a nice consistency. I gave some to the 3 year old who was not impressed. It didn't help that the 5 year old exclaimed "You are eating blood" at the same time he put jam in his mouth. I think the seeds turned him off as there is quite a bit of seeds from the fruit plus the chia seeds. I might sieve off some of the seeds if I can. Strawberry and Vanilla Bean Jam

Apricot Jam Muffins

Lets see how this blog works and post our first recipe!    I made some apricot jam the other day and instead of it being a nice thick jam it turned out a little too thin. It was more of a thick sauce. I decided to turn these into something else - muffins!   I have frozen these ready for the school lunchboxes next month.    I have added sugar to these as well as the jam as the jam wasn't very sweet.
