I am often asked for a banana bread recipe made of wholemeal flour. Up until recently I didn’t have one but after some experimenting I think I finally have one that passes all teh tests – not too dry, lots of banana flavour and not overly sweet. Tick, tick, tick!

Wholemeal Banana Bread

Ingredients

Scale
  • 2 large ripe bananas, peeled
  • 120g butter, softened
  • 90g sugar, can reduce if desired
  • 2 eggs
  • 1 tsp vanilla bean paste
  • 280g wholemeal self raising flour
  • 1 tsp baking powder
  • 60g milk

Instructions

Then mix like this

  1. Preheat oven to 170C. Line a loaf tin with baking paper.
  2. Place bananas into bowl. Speed 5 / 5 seconds.
  3. Add remaining ingredients. Speed 5 until combined.
  4. Pour batter into tin.
  5. Place into oven and cook for 45-50 minutes or until cooked through.
  6. Allow cool slightly before carefully transferring to a wire rack.

Or cook like this

  3. Add remaining ingredients. Mix until well combined.
  4. Pour batter into tin.
  5. Place into oven and cook for 45-50 minutes or until cooked through.
  6. Allow cool slightly before carefully transferring to a wire rack.
