This has been a favourite of mine for over 8 years when a lovely friend shared her version of this with me. A few tweaks later and this is a regular.

Don’t let the sour cream scare you. I hated sour cream before tasting this dish. You can switch it for the Philadelphia Cream for Cooking if you prefer that or Creme Friache. The flavour isn’t as nice but still tasty.

You can also bulk this up with veggies. Peas, corn and broccoli work well.

I also use the chicken mix in puff pastry and make into parcels. Everyone who I’ve made them for LOVES them. This is my signature dish.

Chicken, Bacon and Leek Pasta

Description

One of our absolute favourite dinners. Serve the chicken sauce over pasta as per the below recipe or pop it into some puff pastry to make parcels.


Ingredients

Scale
  • 400g dry pasta of choice
  • 2 chicken breasts
  • 6 pieces of shortcut bacon, diced
  • 1 leek, roughly chopped
  • 2 cloves of garlic, peeled
  • 10g olive oil
  • 1/2 tabs “season all” seasoning
  • 300g sour cream
  • 50g grated cheese
  • Pepper, to taste

Instructions

  1. Cook pasta according to packet.
  2. Cut up chicken into 2cm x 2cm size pieces and coat in season all.
  3. Place leek and garlic into bowl. Blitz on speed 9 for 5 secs. Scrape down.
  4. Add bacon and oil and cook at 100 degrees, speed 2 for 5 minutes.
  5. Attach whisk attachment.
  6. Add chicken and cook at 100 degrees, reverse, speed 2 for 5 minutes.
  7. Open lid and scrape the chicken off the whisk attachment and scrape down the bowl. Keep the whisk attachment in.
  8. Add sour cream. Cook at 100 degrees, reverse, speed 2 for 15 minutes. In the last 4 minutes add the cheese and pepper.
  9. Pour over cooked pasta. Mix and serve.

      No Season All is very essential in this dish as this is where you get bulk flavour.

    I’m usually very sceptical about cooking chicken at the best of times but I gave this meal a go and I won’t be frightened to cook chicken in the thermomix again. It was well cooked and flavourful. My husband went back for seconds. I had intended to bulk it up with vegetables but I was late getting started and in the end I felt it didn’t need it as it’s a very filling meal. There is left overs so maybe I’ll add vegies to that and make into the parcels!

    Made this last night and it was very nice. Put in a punnet of mushrooms (step 6) and used YIAH for seasoning. I added a bit of hot water and cornflour after step 7 which made lots of flavourful sauce to cover the pasta. So quick, will make this next times guests come to stay. And will also experiment with broccoli and herbs,

    This was yummy as! My chicken ended up shredded though.. Not sure what went wrong followed the recipe to the T πŸ™ still yummy and shredded was better for my toddler anyway. This will be a regular dish at my place πŸ™‚
