I wouldn’t say these are a regular around here but these Apple Pancakes with Caramel Sauce are a  favourite for special occasions! These remind me of my favourite pancakes from The Pancake Parlour. So delicious!

You can certainly change up the fruit you use. Pears or banana work really well. Id recommend cooking the banana in a frying pan over medium heat until caramelised though to ensure it keeps its shape.

Apple Pancakes with Caramel Sauce

Ingredients

Pancakes

  • 280g self raising flour
  • 60g sugar
  • 250mls milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon of baking powder
  • ½ teaspoon of finely ground salt
  • 45g melted butter

Apples

  • 3 large granny smith apples, peeled and sliced to taste (thick or thin)
  • 1 tablespoons water
  • 1 tsp ground cinnamon

Sauce

  • 200g brown sugar
  • 300mls cream
  • 80g butter
  • 1 tsp vanilla bean paste

Instructions

Pancakes

  1. Place all pancake ingredients into a large bowl except the butter.
  2. Mix to combine.
  3. Add more milk if it appears too thick.
  4. Add melted butter and mix until just combined.
  5. Place small spoonfuls of the batter into a frying pan on medium heat. I do three at a time. I use a tiny bit of butter to grease my pan.
  6. Once bubbles appear on the pancake, flip over and cook for 30 seconds or until cooked through.
  7. Transfer to insulated server to keep warm.
  8. Wash bowl out.

Caramel Sauce

  1. Place sauce ingredients into a saucepan over medium heat.
  2. Stir until thickened and glossy. This should take 5-10 minutes.
  3. Do not boil the sauce.
  4. Pour into a jug.

Apples

  1. Place apple slices, water and cinnamon into a small saucepan.
  2. Cook on a medium heat, lid on for approximately 8 minutes.
  3. Stir a few times through out this process.
  4. You want your apples slightly steamed.
  5. Drain any excess water.

Assembly

  1. Spoon apples over pancakes.
  2. Drizzle with sauce and serve with ice cream or whipped cream for a really indulgent breakfast or dessert.

  • 1 tablespoons water
  • 1 tsp ground cinnamon

Sauce

  2. Blitz on speed 6 for 20-30 seconds or until lump free.
  3. Add more milk if it appears too thick.
  4. Add melted butter and blitz on speed 6 until just combined.
  5. Place small spoonfuls of the batter into a frying pan on medium heat. I do three at a time. I use a tiny bit of butter to grease my pan.
  6. Once bubbles appear on the pancake, flip over and cook for 30 seconds or until cooked through.
  7. Transfer to insulated server to keep warm.
  8. Wash bowl out.

Caramel Sauce

  1. Place sauce ingredients into bowl.
  2. Cook on speed 4, 90 degrees for 9 minutes.
  3. Pour into a jug.

Apples

  1. Place apple slices, water and cinnamon into bowl.
  2. Cook on reverse, soft speed on 100 degrees for 8 minutes.
  3. Drain any excess water.

Assembly

  1. Spoon apples over pancakes.
  2. Drizzle with sauce and serve with ice cream or whipped cream for a really indulgent breakfast or dessert.
