I thought these were cute so I had to post!

Surely I’m not the only one that often makes pancakes and they join together and become an “8” like shape? Whilst cooking pikelets yesterday I thought I’d experiment (surprise surprise! I should really just stick to a recipe!).

Whip up your favourite pancake or pikelet batter and pour into a squeeze bottle. Holding the bottle squeeze a small oval shape and then directly underneath it squeeze another. Ensure they are touching and look like a figure 8. You want each oval about the size of a ten cent coin. You want them bite size. After 20-30 seconds, flip. I do about 6 at a time.

Serve alongside a little pot of maple syrup for dunking.
