I keep telling her she needs a page so I can follow all her recipes! If I can e half the cook she is I’ll be happy! 
 
Here is Steph’s Steamed Stuffed Mushrooms. Perfect vegetarian meal! 
 
 
 
 
Steamed Stuffed Mushrooms

This makes 5. Served 2 kids (main) and 2 adults (entree), and 1 leftover!!
 
Method:
Line the bottom of the Varoma with a sheet of wet baking paper, and the top tray, depending on how many you are cooking.
Remove stalks from 5 lMushrooms, around 10cm diameter. Place into Varoma tray.
 
Put the following into TM bowl:
-50g Spinach Leaves
-50g Semi-Sundried Tomatoes
-30g Grated Parmesan
-85g Porcini & Caramelised Onion Butter, Link below for my original recipe on RC (or you could just use butter)
-3 Cloves Garlic
-1 tbs fresh mixed herbs. I used thyme and oregano
-Stalks of mushrooms
-2 tsp Balsamic Vinegar
 
Blend 4 sec/Spd 4. Scrape sides of bowl. Add 20g pinenuts. Mix 10 sec/Spd 2.
 
Stuff mushrooms with this mixture. Cook 30 mins/Varoma/Spd 4.
 
With 10 minutes to go, scatter green beans over the mushrooms.
 
(Optional) Once cooked, remove the mushrooms and place on a baking tray. Put around 1 tbs panko breadcrumbs on top and place under the griller for a few minutes to crisp.
 
 
I made parsnip chips to accompany. Slice Parsnip using a vegetable peeler. Toss in oil and salt. Bake for 20-30 mins in around 160C oven.
