Tonight I thought I’d experiment with dinner. Instead of the usual pizzas I thought I’d try pizza pockets for the kiddies.

They are so simple! You just roll out small balls of pizza dough of choice (See my bread tips here for my  go to recipe.), top with sauce and filling ingredients, roll up into a ball by dragging edges towards the centre, flip over, brush with milk and bake for approximately 20-30 minutes.

Kiddies have bacon and cheese inside. Adults have Tuscan chicken, spinach, onion, capsicum and cheese.

Other filling ideas:

  • Spinach and fetta
  • Ham, cheese and pineapple
  • Shredded chicken, bbq sauce, mushrooms and onion
  • Lamb, spinach and feta
  • Roasted capsicum, caramleised onions and mozzarella
  • Cubed pumpkin, prosciutto, onion and bocconcini

    Just looking at lunch ideas I can cook up on school holidays and freeze for next term. Can you tell me how you freeze these? Do you cook them completely then freeze for the kids to have cold?

    Used your fool proof pizza dough recipe for the 20th time tonight! These pizza pockets are delicious and a great idea to make snacks ahead of time. Thank you for another great recipe.
